Oyster omelette (Chinese:蚵仔煎) is a popular Chinese dish from the Taiwan and Fujian province. It is made with oysters and eggs. If you like oysters or seafood, this is a great choice for you.It is very popular at Taiwan’s famous night markets.There are a variety of optional ingredients that may also be added to an oyster omelette. Garlic and spring onions may also be included, as well as spices such as coriander, white pepper, and salt. Vegetable or peanut oil is usually used to cook some elements of the oyster omelette.
- Chives 500g
- Oyster 200g
- 3 eggs
- Parsley 10g
- 2 tablrspoons Korean chili sauce
- 1 tablrspoon ketchup
- white sesame
Wash the chives and Minced.
Wash and shred the oyster omelette.
Wash and shred the parsley.
In a medium bowl, beat the eggs and add oyster omelette and chives. Stir for 10 seconds with chopsticks until coarsely combined.
Combine the Korean chili sauce,white sesame and ketchup, Stir for 10 seconds with chopsticks.
Heat oil in a pan add sauce.Pour the eggs over.Make a well in the centre by pushing the egg and sauce mixture to the sides of the pan.
Cook until slightly golden around the edges.Using two spatulas, carefully flip omelet over in pan.
Serve omelet on a plate and drizzle desired amount of sauce and parsley on top.
