Fish Flavored Pork Slices (Yuxiangrousi)


Yuxiangrousi(Chinese: 鱼香肉丝; also called fish flavored pork slices) is a common kind of Sichuan cuisine. Yuxiang is one of main traditional taste type in Sichuan.It literally means “fish-flavored”, because it is flavored with the same condiments that are used in preparing fish, however Chinese restaurants in the US simply translate it “Sichuan Pork”.


  • pork loin 400g
  • cloud ears,pepper, carrots, bamboo shoots
  • Onion ginger and garlic
  • cooking wine, pepper, a pinch of salt, water, starch, egg white


Step 1

Pour boiling water over cloud ears,pepper, carrots, bamboo shoots, and soak for 20-30 minutes.Onion ginger and garlic cut into trips

Step 2

cut pork loin into trips and marinade with cooking wine, pepper, a pinch of salt, water, starch, egg white for at least 30 minutes (or overnight).

Step 3

Combine 1 tablespoon vinegar, 1 tablespoon soy sauce, 2 tablespoons of sugar, add starch, salt, a little water and ginger, minced garlic, and set aside.

Step 4

In a large skillet or wok over medium high heat, stir-fry pork in 1 tablespoon oil until pork reaches desired doneness.

Step 5

stir-fry onion ginger garlic,add 2 teaspoons Red Pickle,stir-fry until fragrant

Step 6

stir-fry all the ingredients,Serve over rice.
