Beef chow fun (Stir-Fried Rice Noodles with Beef,Chinese: 乾炒牛河) is a
classic and delicious dish originating from Chinese Cantonese cuisine.
It is made with stir-frying beef, hefen (Chinese:河粉,wide rice noodles) and
bean sprouts. The main ingredient of this dish is ho fun noodles, which is
also known as Shahe fen, originating in the town of  Shahe in Guangzhou. The
most common methods of cooking ho fun are in soup or stir fried.Marinating the
beef makes it very tender. You can also add other vegetables like broccoli or
green peppers.The cooking must be done over a high flame and the stirring must be done quickly. Not only must the ho fun be stirred quickly, it must not be handled too strongly or it will break into pieces.


  • 300g hefen
  • 200g beef
  • 4 spring onions, chopped into long strips
  • 3 cups bean sprouts
  • 1 teaspoon crushed ginger
  • 1 teaspoon crushed garlic
  • 3 tablespoons light soy sauce
  • 1 pinch sugar


Step 1

Combine the brown sugar,cooking wine, light soy sauce, mustard, and chopped ginger. Add to the beef and marinate for 1 hour.

Prepare the bean sprouts and cut the green onion.

Prepare the hefen (wide rice noodles).

Step 4

Heat oil in a pan over high heat,add beef and stir fry until fully ripe and set aside.

Reduce the heat to low,Saute the green onion and garlic until aromatic.

Add bean sprouts, stir fry 2-3 minutes until softened.

Step 7

Add hefen and beef,stir fry.

Add dark soy sauce and salt,stir fry.

Step 9

Beef Chow Fun

Serve immediately.
